Preheat your oven to 180°C.
Cream butter and sweetener in a bowl. Add the vanilla and eggs, mix on low for another 15 seconds
Add the almond flour, coconut, xanthan gum, baking powder, chocolate chips and salt. Mix until well combined
Roll the dough (or use a small ice cream scoop) to make 10t balls and place on a baking tray. Bake for 10 mins
Let them cool and serve. Keep in an airtight container for up to 7 days
