Ingredients

Free Range Eggs
½ Cup
Heavy Cream
340g
Bacon
½ Cup
Red Onion
3 Cups
Baby Spinach
½
Cherry Tomatoes
¾ Cup
Mozzarella Cheese
Salt and Pepper to taste

Method

Add bacon to a skillet or pan and cook through
Add onions to the bacon and cook until translucent
In a large bowl combine the eggs, cream and salt and pepper
Add spinach, tomatoes, cheese to the egg mixture
Stir in bacon and onions until well combined
Pour mixture into prepared muffin tins
Bake in the oven for 20-25 minutes, or until cooked
